
Many thanks to Nicole of BookWyrm Knits for recommending this Coconut Cream Pie! It is really delicious, and pretty easy to make! I did use my own pie crust instead of the suggested refrigerated pie crust. As the recipe suggested, I replace the half-and-half with canned coconut milk. And finally, I cheated on the whipped cream and used canned.
The pie turned out with a lovely smooth, rich texture and great coconut flavor. It’s a well-written recipe that gives you everything you need to make the dish without tons of exposition 🙂 I second Nicole in recommending this recipe!

Looks wonderful. I love coconut cream pie but always end up with a lot of leftover coconut.

We have a lot of leftover coconut too. However, I make homemade yogurt, and this morning I found out toasted coconut makes a great yogurt topping 🙂

This looks delicious. Most coconut cream pies I have seen are topped with meringue. I do prefer your choice of whipped cream.
