Baking Experiment: Pumpkin Spice Cake

After blowing off my baking experiments last month, I have some making up to do. I will probably be baking a couple of things this month. I started with a pumpkin spice cake, and use one created for use with the Haunted Mansion cake tin I got last year.

I used this recipe, and did not make any substitutions. The ingredients include a cup and a half of oil, which seemed like a lot. And right when I added it in to the wet mix, it did not incorporate in easily. However, as I mixed in the eggs, it all came together pretty well! It made a nice moist cake with a good flavor.

And-bonus-there was too much batter for just the haunted house bundt, so I had enough left over to make some tombstone mini cakes!

I’m not sure what the next bake will be – probably something for Thanksgiving. Do you have any special cakes or pies you make for the holidays?

    1. LOL! Very true! I did used to make fruitcakes that were pretty good! Instead of the candied fruit, I took a mix of regular dried fruit (pineapples, mangoes, dried cherries, etc.) and soaked that in rum. I liked how it turned out! I might need to try eggnog cake – I don’t drink eggnog itself because blech. But an eggnog cake might be good! And yes for sure to gingerbread 🙂

    For us (aka my whole extended family), it doesn’t feel like the holidays without Grandma’s apple pie. I took over making the pie around a decade ago, while Grandma was still with us, and seeing her smile when I took over pie duty was so special. These days, pie making is split between me and my sister’s family (she’s teaching her kids).
