Continuing on with my Bundt pan obsession, I recently got this cakelet pan

Baby bunnies! And then was even more thrilled to find this recipe for carrot cake minicakes.
I have not had a ton of success with carrot cake before this – it usually got either gloppy or way too dry. This time they turned out just right.
Mine didn’t show off the bunny shapes as well as I hoped, but they tasted really good, so fair enough! I did not make the icing at all. The cake was good enough on it’s own.
I think the next experiment will be Coconut Cream pie, but we shall see! Did you have any special Easter treats this past weekend?

I always go for tasty over pretty and the less icing the better for me. These look right up my alley. We had the apple tarts from an Omaha Steaks box we got last summer. They were tastier than I was expecting.

They were tasty! They disappeared pretty quickly. While I was baking them, my DH was grumbling a little that he doesn’t like carrot cake, and his two were gone the quickest. It is such a cute pan!
