Baking Experiment: Atlantic Beach Pie

Two pies in one month? Madness! But it had to be done. Michele of pdxknitterati recommended this recipe for Atlantic Beach Pie, and I needed to try it immediately. Its a kind of variant on Key Lime Pie with a few differences. First, the crust is crushed saltines with some sugar and butter added, this gives the pie a salty/sweet balance that is really interesting. The filling can be lemon, lime, or a combination. I went with a roughly 50/50 mix of the two.

It turned out reasonably well! Except for one thing.

If you would like your crust to hold together, the crackers need to be crushed up much, much finer than this. So I need to work on that part of it, but otherwise, it is a delicious pie! We did not add either salt or whipped cream as toppings, which the recipe suggests, but it was so good anyway. It’s a mix of salty, sweet, and sour, and contrasting textures as well, the crunchy crust and silky filling all make for an interesting dessert.

I can see this being equally good with other citrus flavors – grapefruit or orange or whatever. But the lemon/lime mix is lovely and sour. So thank you Michele for the great recommendation! Next baking experiment will be a cake of some kind. What kind? No telling until it happens.
