I made lemon meringue pie last night – it turned out pretty well! I used this recipe from Sally’s Baking Recipes, with one big change. I used my own pie crust recipe, which is taken from an old Crisco baking book. It works perfectly well for most applications, so I’m sticking with it. Otherwise, it’s all her the recipe linked above.
As you can see, the meringue and lemon layers separated, but I can live with that. The curd is nice and tart with lots of lemon flavor. There is a tiny bit of salt in both that and the meringue that keeps it from being too sweet and kind of insipid, which a lot of lemon meringues are. As per advice from Hannah of Quiet Water Craft, I used an electric mixer and did not try to whip it by hand. I won’t say this is an easy recipe – there are a lot of steps and I messed up a lot of bowls and all of my ingredient measuring apparatus, but it is worth it.

This is one of my favorites but I rarely make it because of all the steps. If I can get one at a good bakery, I’ll buy it. I love almost anything lemon.

Your pie looks lovely! I don’t like meringue, so I’ve never made a lemon meringue pie. π But I recently made a coconut creme pie that made me think I should look for a lemon cream / lemon tart kind of pie instead, because I like the lemon part.

You’re welcome! It was pretty easy to make, and I think it’s a light pie that would work well for springtime. (We had it for a winter birthday, but close enough. π ) I decided to toast the coconut on the stovetop so I could control the degree of toasting better, and that worked really well.

That looks delish! I prefer a tart pie too. Haven’t made a lemon meringue pie in ages. I use a crisco crust as well.

Cherry pie!!! My former mother-in-law would make it for my birthday dessert. She made it with fresh cherries. Her crust was TO DIE FOR! No one cared for it so I would eat a slice for breakfast every day until it was gone. ermagherd!!!
